Garlic and Chili Cheese Toast
A family favorite! The flavor of cheddar blends surprisingly well with the garlic and fresh chilies when toasted. This dish is spicy but very tasty!
Prep Time: 10 minutes Toasting Time: 15–20 minutes Serves: 4 (2 slices per person)
1 loaf of preferred bread, sliced (e.g., multigrain or white)
4 c. reduced-fat sharp (white or yellow) cheddar cheese,* shredded
4 green chilies, finely chopped (less if you prefer a mild taste)
3 cloves of fresh garlic, minced
1/2 tsp. salt, or salt to taste
1/2 tsp. black pepper
1/4 tsp. red chili powder
1. Combine all the ingredients above in a medium mixing bowl. Blend well and spoon 1/2 c. of the mixture onto each slice.
2. In a toaster oven, toast slices on medium/medium-high setting and serve hot.
* You can substitute low fat mozzarella cheese for cheddar.
